Cashew Bites

Happy Sunday 🙂

Yesterday, I was craving something sweet, and for a while wanted to try to prepare a cashew energy bites. Every time I buy the ingredients, I eat them before I start cooking. It is a very simple and easy recipe requirering two ingredients- cashew and cranberries. I was thinking adding oats and peanutbutter and covering them with chocolate, but last minute decided trying, if they will be ok with just two ingredients- they turned out perfect. If you decided to try them, you can cover them with chocolate, I will try it next time

Servings: 12 Time to prepare 15 min
  • 100 gr. cashew
  • 100 gr. cranberries
Optional Ingredients:
  • 2-3 drops of vanilla
How to:
  • In a blender, place the cashews and cranberries and mix for about 3-4 min. It is better, if can you use a strong blender to receive a smooth consistency as it will be easier to form the bites.
  •  With hands, start forming the bites, taking approximately one teaspoon of the mixture. If the dough is not very smooth, press a little bit more when forming each ball.
  •  Enjoy as on to go snack, dessert or breakfast snack, I just ate 3 🙂
  •  Keep in the fridge in air tight container for about a week if they last so long.
