A couple of days ago, I wanted to prepare a sandwich with eggs and remembered about one with eggs from my childhood. When I was a child, at some birthday parties, there were different types sandwich, and this one was regular. Simple but very tasty and fulfilling 🙂 Prepared with just boiled yolks and mayo or yogurt. When, I was researching, I found that this is similar to an egg salad sandwich, so I called it yolk salad. You can use the yolk mixture to fill the whites and voilà you have a tasty appetizer as well 🙂
Servings: 18 halves eggs/ 4- 5 sandwiches; Time to prepare 20 min

Ingredients:
- 9 eggs
- 5 tsp yoghurt
- 1 tsp. olive oil
- 1 tsp. lemon juice
- 2 tsp chopped onion
- 2 tsp. chopped parsley
- pinch of salt
- pinch of black pepper
How to:
- Boil the eggs hard for abt 7- 8 min
- Peel and half them, separating the yolks in a small saucer bowl
- With a fork mash the yolks, or if you want, you can use a hand mixer
- Add the yogurt and mix well; if you need, add one more spoon. You should receive a soft creme consistency ( ps. you can use mayo instead of the yogurt)
- Add olive oil and mix again
- Add the rest of the ingredients and mix well
- Now you can fill the egg whites for an appetizer or use them as a base for a sandwich.
