Hello Everyone and Happy Easter,
Last week, I started cooking again 🙂
I dont mind moving places, I mean I prefer to have one, but if I dont feel good or I have opportunity to move to a better I will. Moving places and countries has it pluses and minuses. For me when I am between moves I cant stay too much in the place and most of time cant cook either, everything is packed and somehow dont have the peace to do so 😦 But now as I have found a new home place for awhile, I can plan my meals and have something warm and tasty- so hapyyyyyy.
One of my meals during the week is usually soup as is quick and I have a few portions. For awhile wanted to try soup with coconut and this one turned very tasty.
Servings: 4 Time to prepare: 10 min Time to cook: 20

Ingredients:
- 500 gr broccoli
- 1 medium white onion
- 2 medium carrots
- 1/2 can of coconut crème
- 2 tbsp. olive oil
- 800 ml water
- 1/2 tsp. pink/ sea salt)
- 1/2 tsp rosemary
- pinch of black pepper
Garnish:
- yogurt
How to:
- Cut the vegies into bigger pieces as at the end it will be pureed.
- In a medium pot pour the olive oil and leave to heat on medium.
- Add the chopped onions and leave for a 1 or 2 and add the chopped carrots.
- Mix well and leave for about minute before adding the broccoli.
- Keep mixing to prevent sticking on the cooking top.
- This is for about a couple of minutes until the veggies starts changing their colors.
- Add the water and leave for about 10 minutes- until veggies are fully boiled.
- Take aside and blend with hand mixer or blender.
- If you had used blender pour back to the top.
- Add the coconut crème and mix well.
- Add spices.
- Serve and garnish with a spoon of yogurt.
