Veggie Soup with rice

Hello Everyone,

The recipe today is a very simple soup. Usually, soup is one of the meals I prepare during the week and try to keep them with just a few ingredients.

Servings: 6 Time to prepare 10-15 min Time to Cook 25min

  • 200 gr potatoes
  • 150 gr/ 3 carrots
  • 1 medium head onion
  • 1-2 gloves garlic
  • 1 bellpepper
  • 100 gr mushrooms
  • 1 egg
  • 2 tsp. rice
  • 1tbsp.salt
  • 1tbsp. black pepper
  • 100 ml. olive oil
  • 1.5 l water
Optional Ingredients:
  • 1/2 lemon – squiz juice and add at the end to each portion

How to:
  1. Peel the potatoes and cut them into cubes.
  2. Clean the onion and cut it into small pieces.
  3. Cut the rest of the veggies into small pieces.
  4. In the preheated medium top place the oil, wait for a minute until is warm, and add the onion and the garlic.
  5. Wait until it starts changing its color to start adding the veggies -carrots, paprika, potatoes, mushrooms.
  6. Mix well and keep for a few minutes until the veggies, start changing their color.
  7. Add the rice.
  8. Add the water and leave to boil for about 15- 20 min.
  9. Check if the potatoes and the rice are ready and if not, leave for a few more minutes.
  10. Break one egg directly in the soup and mix right away very well.
  11. Add the spices.
  12. Leave to cool aside.
  13. Serve and enjoy.
