Spinach Pesto with Walnuts

The other day I realized I had bought too much spinach, wondering what can I cook, decided to try to make pesto. Have seen people replacing the basil with other green ingredients, so I decided to try with spinach.

Ingredients:
  • 250 gr. spinach
  • 40 ml. olive oil
  • 40 gr. walnuts
  • 3 tbsp. grated parmesan
  • pinch of salt and more for taste
  • 1/3 juice of half lime or lemon
How to:

Put all Ingredience in a blender/ food processor and blend until homogeneous mixture. Store in a jar or any airtight container and it will last for a week stored in a fridge.

The end result is not as strong as basil ( I think ) but is lovely and I used for sandwiches, snacks and tuna fish steak.
