As it is spring here, I wanted to prepare a soup with spring ingredients, something green. I ended up picking some spring onions, green beans, and new potatoes. So this is what I came up with 🙂
Servings:6
Time to prepare:15-20 minutes
Time to Cook:20 min

Ingredients:
- bunch of green onions (100-150 gr.)
- 100 gr. green beans
- 1 medium carrot
- 2 celery leaves
- 100-150 gr. baby potatoes
- 1 egg
- 2-3 tbsp. fresh cream
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/3 tsp. curcumin
- 3-4 tbsp. grapeseeds oil
- 1.3 L of water
How To:
- Peel the potatoes and the carrot.
- Clean the ends of the green beans.
- Chop all veggies.
- In a preheated cooking pot with the oil, add all veggies.
- Start mixing so they don’t stick to the bottom of the cooking pot.
- Mix until they start changing their colors.
- Add water and the curcumin, and leave the soup for about 15 min.
- Meanwhile, in a small bowl, mix the egg with the cream.
- Check if the potatoes and carrots are boiled well; if not, leave for another 5 min.
- When the potatoes and carrots are fully ready, add the egg mixture, mix well, and set aside.
- Add salt and black pepper, and leave to cool down.
- Serve and enjoy 🙂


! If you struggle with proportion, just use 100 or 150 per veggies, it balances them in a good way 🙂
