Leftover Almond Cookies

Hello Everyone 🙂

The last couple of months I have transitioned to make different plant based milk at home. As a result I have ended up with a lot of leftover pulp. I usually freeze it to have from 3 or 4 times so I can prepare cookies or crackers. For the recipe below I had almond pulp but it can be prepared with any type.

Interesting fact:

Almonds have one of the highest content of protein of all nuts-Per 100g there is 21.1g of protein!


Servings: 20-30
Time to Prepare: 10 min
Time to Cook: 20 min

Almond Pulp Biscuits
Ingredients:
  • 450-480 gr. almond pulp
  • 2 eggs
  • 100 gr butter
  • 200 gr. honey

How To:
  1. In a meium bowl whisk the eggs.
  2. Add the honey and butter and mix well. You can blend evrything or use hand mixer.
  3. Add the almond pulp.
  4. Mix everything well.
  5. With hands form a small round piece similar to small to medium cookies.
  6. Bake on medium heat 150-170 degree for about 20- 25 min.
  7. Take out and leave to coll down.
  8. They are great with glass of milk or piece of chocolate.
  9. Enjoy.
