I have prepared this salad a couple of times, just cheese and Butternut Squash -but this time decided to add some dried fruits and it was tastyyyy.
I love the combination of sweet pumpkin and tangy feta cheese. Initially was going to add blueberries, but as I finished them before I started with the salad, I added the dried fruits instead 🙂
You can try adding blueberries instead of the dried fruits- the color combinations is great.

Time to Prepare: 10 min
Time to cook: 10-15 min

Ingredients:
- 250 gr. Butternut Squash
- 150 gr. feta cheese
- 50 gr. cashew
- 1 tbsp. dried black currant/raising/ fresh blueberries
- 1/2 tsp. salt
- 1/2 tsp. black peppers
- 1-2 tbsp. olive oil/grapeseed’s oil
Garnish:
- parsley leaves
- kale or any other green leaves salad
How to:
- Cut the butternut squash into medium to small cubes.
- Place them over baking tray covered with baking paper.
- Drizzle the oil and salt and place in preheated oven for about 15 -20 min on 170 grad. If you have an airfrier you can bake it there for about 10 to 15 min.
- Just before taking it out add the feta cheese.
- Leave for another 2- 3 min in the oven so the cheese can melt a bit.
- Take out from the oven and add the dried fruits, black paper, cashews and mix well.
- In each plate place one -two green leaves and place the salad on the top.
- Garnish with parsley.
- Enjoy 🙂
