Hello Everyone,
Today will present a summer recipe very typical during the summers in Bulgaria 🙂 It is very quick and perfect for times when you don’t have time to cook but want something fulfilling and healthy. The recipe is named after a region in Bulgaria, but every province has own spin on it. Today I tried two variants my mum usually cooks, one the more traditional with paprika oil and the second one with water sauce. Both of them are tasty 🙂
Servings: 2 Time to cook: 10 min

Ingredients:
- 250 ml water
- 4-6 eggs
- 4- 6 tbsp. yoghurt
- 2-3 tbsp. olive oil
- 1 tsp paprika
- pinch of black pepper
- pinch of salt
- 1- 2 gloves garlic
- parsley
How to:
- In a small top bring the water to boil
- Take aside and break the eggs
- Put back to the oven but on medium heat for 3 to 5 min depending on how you like your eggs ( soft or hard boiled)
- Take out the eggs from the water and place them on the serving plates
For the variant with water sauce:
- Remove 50 ml of the boiled egg water
- Add 2- 3 spoons of yoghurt
- Add oil and mix well
- Add black & red pepper
- Add chopped garlic, leave for 2 min
- Take aside and pour over the eggs
- Garnish with parsley
For the red paprika oil variant:
- In a small saucepan, heat the oil
- Add the red paprika and mix for about a min
- Take aside
- On the plates with eggs first, add two spoons of yoghurt for each portion
- Add the heated paprika oil on the top
- Garnish with chopped garlic and parsley ( first photo below)
