EGGS ‘PANAGURSKI’ STYLE

Hello Everyone,

Today will present a summer recipe very typical during the summers in Bulgaria 🙂 It is very quick and perfect for times when you don’t have time to cook but want something fulfilling and healthy. The recipe is named after a region in Bulgaria, but every province has own spin on it. Today I tried two variants my mum usually cooks, one the more traditional with paprika oil and the second one with water sauce. Both of them are tasty 🙂

Servings: 2 Time to cook: 10 min
Ingredients:
  • 250 ml water
  • 4-6 eggs
  • 4- 6 tbsp. yoghurt
  • 2-3 tbsp. olive oil
  • 1 tsp paprika
  • pinch of black pepper
  • pinch of salt
  • 1- 2 gloves garlic
  • parsley
How to:
  1. In a small top bring the water to boil
  2. Take aside and break the eggs
  3. Put back to the oven but on medium heat for 3 to 5 min depending on how you like your eggs ( soft or hard boiled)
  4. Take out the eggs from the water and place them on the serving plates
For the variant with water sauce:
  1. Remove 50 ml of the boiled egg water
  2. Add 2- 3 spoons of yoghurt
  3. Add oil and mix well
  4. Add black & red pepper
  5. Add chopped garlic, leave for 2 min
  6. Take aside and pour over the eggs
  7. Garnish with parsley
For the red paprika oil variant:
  1. In a small saucepan, heat the oil
  2. Add the red paprika and mix for about a min
  3. Take aside
  4. On the plates with eggs first, add two spoons of yoghurt for each portion
  5. Add the heated paprika oil on the top
  6. Garnish with chopped garlic and parsley ( first photo below)
