I love salads, and they are on my menu usually for dinners as I try to have something light then, but this is not always the case. This is one of the recipes that I dint plan, but just looking around, I decided to try and see the result. You will need to have Box Grater to cut the veggies.
Servings: 4 Time to prepare 20 min
- 4-5 medium carrots
- 1 cucumber
- half medium onion
- 5-6 tbsp. yoghurt ( depending on the brand you are using)
- 1tsp. salt
- 1tsp. black pepper
- 50 gr pecans or walnuts
- 2tbsp. olive oil
- In a big bow grate the cucumber, carrots and onions.
- Add salt, black pepper and pecans and mix well.
- Add the yoghurt and olive oil and again mix well.
Note: you can store it in the fridge for one day.
