Carrot Salad

I love salads, and they are on my menu usually for dinners as I try to have something light then, but this is not always the case. This is one of the recipes that I dint plan, but just looking around, I decided to try and see the result. You will need to have Box Grater to cut the veggies.

Servings: 4 Time to prepare 20 min
  • 4-5 medium carrots
  • 1 cucumber
  • half medium onion
  • 5-6 tbsp. yoghurt ( depending on the brand you are using)
  • 1tsp. salt
  • 1tsp. black pepper
  • 50 gr pecans or walnuts
  • 2tbsp. olive oil
How to:
  1. In a big bow grate the cucumber, carrots and onions.
  2. Add salt, black pepper and pecans and mix well.
  3. Add the yoghurt and olive oil and again mix well.

Note: you can store it in the fridge for one day.
