Spinich-Chickpeace Creme Soup

The other day, I was looking to cook something very quick and with a few ingredients and decide to cook spinach soup, but decided instead of potatoes to try using chickpeas.

Total time to cook: 20 min.

Servings: 4

Ingredience:

  • 500 gr Spinach
  • 200 gr chickpeas ( one can)
  • 1 onion
  • 2 carrots
  • 2 tbsp. olive oil
  • 700 ml water
  • 2 tsp spoons salt
  • pinch ground black peppers, plus more to taste

Optional garnishes:

yogurt & walnuts

How to :

Cut the onion and the carrots on cubes and put into the heated olive oil in the pan for abt 5 min. Add the spinach and wait until it changes it colors and add the can of chickpeas. Stir well and add 700 ml water, bring it to boil , probably for abt 5 min. take aside and use passator or hand mixer to make the crème soup. Put for another 2 min on the oven and add salt and black paper.

Sip in a small bow and garnish with spoon yoghurt and walnuts.
