Green Spongy Cupcakes

As St. Patrick’s Day is this coming week, I am trying different green recipes and wanted to prepare green cupcakes.
They don’t have the very vibrant green color, but they are ok 🙂
For the base, I used a sponge recipe I’ve been familiar with since I started cooking. I just replaced some of the flour with protein powder and added matcha 🙂
I tried this recipe a couple of times, and the last two times I received a spongy texture.

Ingredients:
  • 3 eggs
  • 2 tbsp. vanilla protein powder
  • 1 tbsp. flour
  • 1 tbsp. honey
  • 1 tbsp. oil
  • 1tsp. matcha powder
How to:
  1. In a small bowl, sift the protein powder, matcha, and flour.
  2. In a medium bowl, break the eggs and with a hand mixer, whisk them until you receive a foamy texture.
  3. Add the honey and mix very well until the eggs absorb the honey.
  4. While mixing, add 1/3 of the protein mixture and mix until it is absorbed by the eggs. Add another part of the protein mixture and again mix well. Keep adding the dry ingredients and mix well until all of them are added.
  5. Make sure you have mixed all ingredients well, so you receive a homogeneous mixture.
  6. Oil the cupcake forms and add the cake mixture.
  7. Bake in a preheated oven for 35- 40 minutes at 150 degrees Celsius.
  8. Take them out and leave them to cool down.
  9. You can serve them with jam, cream, or enjoy them as they are.

!You will receive more like a bite-sized cupcake rather than a big one.
