I hope you had a relaxing weekend.
I am looking to create some green recipes as St. Patrick’s month is coming as well as spring, so decide dto try a stew with almost just green ingredients.

Time To Cook:20-25 min

Ingredients:
- 1 onion
- 3-4 cloves garlic
- 1 stalk of leek
- 2-3 celery stalks
- 1 green paprika
- 2 zucchini
- 1 carrot
- 100ml grapeseed oil or your oil of choice
- 1 tsp. salt
- 1 tsp. black pepper
- 3 bay leaves
- 500 ml. water or bone broth
How To:
- Chop all veggies into small cubes.
- In a preheated pot with oil, add the bay leaves so they can release some of the aroma in the oil before adding any veggies.
- Sauté the garlic and onion for 2-3 minutes.
- Add the leak and mix well, leave for 2-3 minutes.
- Add the rest of the veggies and mix well.
- Leave for a few minutes, until the veggies change their colors, all while mixing from time to time to prevent sticking to the bottom.
- Add water and leave for about 10 -15 minutes.
- Add spices and set aside to cool down.
- Serve it as it is or with rice.
- Enjoy
