Blueberry Oats Cake

Hello and Happy Sunday,

Hope Everyone had a good first week of the year 🙂

A few days ago, I was craving something sweet and had some blueberry leftovers in the fridge, so I decided to try and create something.


Servings:8-12
Time to Prepare:5-7 min
Time to Cook:40 min

Ingredients:
  • 2 eggs
  • 100 ml water or milk
  • 5 tbsp. oats
  • 1/2 tsp. soda
  • 2 tbsp vanilla protein powder
  • 2 tbsp. grapeseed oil or olive oil
  • 1 tbsp. yoghurt
  • 250 gr blueberries
How To:
  1. In a small bowl, whisk the eggs and the water/milk very well.
  2. Add the oil.
  3. In a small cup, activate the soda with one tablespoon of yoghurt.
  4. Add it to the egg mixture.
  5. Mix very well.
  6. Add the protein powder and oats and mix well.
  7. Before transferring the cake mixture to a baking form, oil the baking form and cover it with oats slightly.
  8. After you put the mixture in the baking form, add a handful of blueberries over it and slightly push them into the mixture.
  9. Bake at 180 degrees Celsius for about 25-30 minutes.

Blueberry Sauce:

I created something like a jam, but if you have store-bought, you can use it.

  • In a small saucepan, place around 150-200g. fresh blueberries.
  • Leave it for about 10 minutes or until the water from the berries evaporates.
  • Take it out and leave it aside to cool down.
  • If you have already baked the cake, cover it with the homemade jam or use store-bought.
