My mum visited me recently and one of may recipes we tried to cook is soups. We had quite a bit of fresh tomato’s and decided to try tomato soup.
Easy, Quick and Tasty.
Interesting fact:
The scientific name for tomato is Lycopersicon lycopersicum meaning wolf peach.
Servings:6-8
Time to Prepare:10 min
Time to Cook:15-20 min

Ingredients:
- 3 medium tomatoes
- 2 onions
- 1 paprika/pepper
- 3 celery sticks
- 1 garlic clove
- 50 gr. rice
- 1200ml. water
- 50 ml. oil
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. turmeric
- 1/2 tsp. smoked red pepper
How To:
- Cut all veggies.
- In a preheated cooking pot with oil, sauté the garlic and onion for a few minutes.
- Add the fresh paprika, celery, and rice, and mix so it doesn’t stick to the bottom of the pot.
- Add tomatoes and again mix well and leave for a minute or two.
- Add the water and leave for another 5 to 10 minutes until all veggies are well-boiled.
- Add all spices and mix well.
- Take it aside and leave it to cool down.
- Use a hand mixer or blender to make the mixture into a cream.
- Serve with yoghurt, leaves of basil, and bread.

We ended up making it 3 consecutive times, first because I didn’t make a photo and second it was just so tasty and is a soups season 🙂
