Hope you had a lovely weekend and Halloween if you celebrate it 🙂
For the last few weeks I have been cooking sweet potatoes and tried to make a cookies. I prepared this recipe twice and it turned quite good.
Something sweet for the autumn season that can be used for Breakfast, Snack or Sessert. You can easily swap the sweet potatoes with pumpkin.
Servings:12-15
Time to Prepare:10 min
Time to Bake:~60 min

Ingredinest:
- 400 gr. sweet potatoes
- 2 eggs
- 10 tbsp. grapeseed oil or melted coconut oil
- 2 tbsp. brown sugar
- 150 oats
- 50 gr. walnuts
- 1 tsp. cinnamon
How To:
- Peal and cut the sweet into pieces and boil in a small top for 20 -30 minutes.
- After boil, drain the liquid and leave the potatoes to cool down.
- In a blender place the potatoes and the eggs and blend until homogeneous mixture.
- Add the rest of the ingredients and blend for a few more minutes.
- Scoop with a spoon and place on a covered tray with baking paper.
- Again with the help of a spoon form the shape of a cookies.
- Bake on a medium heat for about 30-40 min.
- Take out and leave to cool down.
- Enjoy with jam & milk.
