I hope you had a lovely weekend. Here it is a typical gloomy autumn weather, but at least is not rainy 🙂
As it is autumn season this mean cozy soup season and today I made a new type of soup so it will share it here.
It is vitamin rich and with some proteins 🙂
Portions: 7-9

Time to Cook: 20 min

Ingredients:
- 100 gr. kale
- 1 medium onion
- 2 cloves of garlic
- 1 medium carrot
- 1 yellow paprika
- 10-150 gr. mushrooms
- 150 gr small shrimps
- 2 tbsp. rice
- 1 tsp. salt
- 1/2 tsp black pepper
- 120 ml. grapeseed oil
- 2 l. water
- 2 eggs
- dill
- mint
Garnish:
- yoghurt ( 1 tbsp per portion)
How To:
- Chop all veggies- onion, garlic, carrots, paprika, kale, mushrooms, green spices, and put each one in a separate small bowl.
- In a preheated pan with the oil, place the onion and garlic and sauté until they start changing colors, then add the carrots and paprika and mix well.
- After around 2 minutes, add the kale, mix well, and leave until the kale changes its colors, while mixing from time to time to prevent sticking on the bottom.
- Add the mushrooms and shrimps, and leave for another 2-3 min while mixing from time to time.
- Add water and the 2 tablespoons of rice and leave for 15 minutes to boil well.
- In a small bowl, mix the eggs with salt and black pepper and add them to the soup while mixing. You will end up with some small egg pieces.
- Add the mint and dill, then remove the soup from the heat.
- Leave aside to cool down and serve.
- You can garnish with a table of yogurt or sour cream.
