Matcha Cookies

Hello and Happy Friday 🙂

I don’t know if it’s because it’s a trend or I just got to like matcha, I am drinking more and more, to the point I bought some and started preparing it myself. So now I am experimenting with matcha cookies 🙂
This is one of my experiments, quite good, but I will keep trying different ones. If you have any recommendations, please let me know.
As always, simple, easy, and quick.

Servings:9-12
Time to Prepare: 5-7 min
Time to Cook: 20-30 min

Ingredients:
  • 80 gr. of oats
  • 100 ml. plant-based milk
  • 1 tsp. matcha
  • 2-3 tbsp. honey
  • 30 gr. walnuts
How to:
  1. Place all ingredients in a blender and pulse 2 -5 times until you receive a homogeneous mixture, but you still see the oat pieces. Or you can mix all ingredients in a bowl with a spoon,
  2. Helping yourself with a spoon, place small amounts on a baking tray covered with baking paper.
  3. Bake in a preheated oven at a medium heat, or 160-170 degrees.
  4. Take out and leave to cool down.
  5. Best taste if they are left for the next day 🙂
  6. Enjoy with milk, as a snack, or even for breakfast.

Fantastic recipe! Just like you, I’ve been on a matcha spree these past few months. I found that it wakes me up in a sustained manner compared to coffee.
