Here is a another easy and quick recipe

Ingredients:
- 150 gr. spinach
- 1 onion
- 1-2 cloves of garlic
- 1 celery rib
- 1 yellow bell pepper
- 100-150 gr. zucchini
- 50-80 gr. olives
- 3 small tomatoes
- 50 ml. almond creme or regular cooking creme
- parsley
- 50 ml. grape oil/olive oil
- 1 tbsp. salt
- 1 tbsp black pepper
How to:
- Chop all veggies.
- Sauté the onion and garlic for about 2 minutes.
- Add the celery and bell pepper and leave for another 2 minutes, while mixing the veggies from time to time to prevent them from sticking to the pan.
- Add the zucchini & tomatoes and leave for about 5 min, again mixing from time to time to prevent sticking to the pan.
- Now, after the tomatoes have let some of their water, you can add the spinach and leave for another 3-5 minutes, until the spinach changes its color fully to a darker green.
- You can add the creme, olives, parsley, and spices, and leave for another 2 min.
- Take aside and leave to cool for 5 minutes before serving.
- You can serve it as it is or with quinoa or rice.
