Spinach Stew

Here is a another easy and quick recipe


Servings:2
Time to Prepare:5 min
Time to Cook:15 min

Ingredients:
  • 150 gr. spinach
  • 1 onion
  • 1-2 cloves of garlic
  • 1 celery rib
  • 1 yellow bell pepper
  • 100-150 gr. zucchini
  • 50-80 gr. olives
  • 3 small tomatoes
  • 50 ml. almond creme or regular cooking creme
  • parsley
  • 50 ml. grape oil/olive oil
  • 1 tbsp. salt
  • 1 tbsp black pepper
How to:
  1. Chop all veggies.
  2. Sauté the onion and garlic for about 2 minutes.
  3. Add the celery and bell pepper and leave for another 2 minutes, while mixing the veggies from time to time to prevent them from sticking to the pan.
  4. Add the zucchini & tomatoes and leave for about 5 min, again mixing from time to time to prevent sticking to the pan.
  5. Now, after the tomatoes have let some of their water, you can add the spinach and leave for another 3-5 minutes, until the spinach changes its color fully to a darker green.
  6. You can add the creme, olives, parsley, and spices, and leave for another 2 min.
  7. Take aside and leave to cool for 5 minutes before serving.
  8. You can serve it as it is or with quinoa or rice.
