I am experimenting with creating variety of oats cookies and this was one of the successful one.
The end result is a soft cookie and perfect to make a ice cream sandwich.
Servings: 9–12
Time to Prepare:10 min
Time to Cook:30 min

Ingredients:
- 200 gr dates
- 80 gr oats
- 1- 2 tbsp. cacao
- 120 ml water or plant based milk
Optional:
- 1-2 tbsp. cacao nibs
How to:
- Soak the dates in the water for at least an hour with the water.
- In a blender add the soaked dates, cacao and oats.
- Mix well until homogeneous mixture. The batter is soft not liquid not hard.
- Use a spoon to place a small amount on a baking tray covered with oiled baking paper.
- With the spoon form the cookies.
- Bake for 20 -30 min on medium heat or 150-180 degree.
- Enjoy with milk, peanut butter or a cup of coffee.
