For the last couple of weeks, I put myself into a challenge to use the same ingredients I usually have in the fridge, but to find a way to prepare them differently. This is how this recipe comes to life.
Having fruits always around and part of my breakfast I decided to try to bake them with eggs 🙂
It is quick and definitely has a different taste than a regular omelet. Here is a recipe for a fruit omelet. You can use the fruit you have lying around, but I recommend bananas and berries. I also advise using no more than two types of fruits.
Servings: 6
Time to prepare: 5 min
Time to Bake: 20-30 min

Ingredients:
- 2 banana
- 150 gr blueberries
- 50 gr hazelnuts
- 50 gr cashews
- 5 eggs
Toppings:
- honey
- wiped cream or yogurt
How to:
- Cut bananas into circles.
- Whisk the eggs in a small bowl.
- In a medium baking tray covered with oil arrange one raw banana to cover the bottom.
- Add the blueberries, spreading them equally around the tray.
- Add hazelnuts and cashews. !If you prefer other nuts feel free to change them.
- Cover the fruits with the whisked eggs.
- Put in the oven for about 20 -25 min on medium heat until the eggs are done.
- Take out of the oven and serve with honey and yogurt or yogurt.
- Enjoy
