I hope you had a lovely weekend.
The past week I was trying different recipes with Cauliflower and kept the leaves as I heard they are as well rich on vitamins. Wondering what to cook decided to make this week’s soup with them. It turns quite tasty.

Time to Prepare 20 min
Time to Cook 20 -30 Min

Ingredients:
- Caloflower leaves 5-6 or from one Califlower
- 1 onion
- 1 carrot
- 1 flat mushroom
- 2 potatoes
- 1 stick celery
- 100 ml grape oil
- 1 egg
- 800 ml water ( or bone broth)
- 1 tsp. salt
- 1 tsp. black pepper
- 1/2 tsp. turmeric
How to:
- Chop all veggies into small cubes.
- In a preheated top with the oil add onion, carrot and celeray.
- Stir the vegies from time to time, this is for about 3- 5 min until the vegies start changing their color.
- Add the potatoes and keep mixing for another 2-3 minutes.
- Add the chopped cauliflower leaves and mix well.
- Add the water or the boulion and leave for another 10 -12 minutes or untul all vegies have are ready.
- Add one egg and mix well so the egg breaks into pices. If you prefer you can whisk it in a small bow and then add it.
- Add all spices and serve just like this or with yoghurt/ lemon juice.
