As spring is coming will post a few recipes with main ingredient being green. First on the menu is something with Zucchini.
Interesting fact: Looking into nutritional value I found out that actually zucchini is classified as a fruit and the flower is editable too.
Nutritious Value: zucchini contains an impressive amount of vitamin C, potassium, and manganese.1 medium zucchini has more potassium than 1 medium banana.
Servings: 4
Time to Prepare: 5-7 min
Time to Cook: 20-30 min

Ingredients:
- 2 zucchini
- 1 onion
- 1 clove of garlic
- 1 medium carrot
- 1 can of chickpeas
- 700ml. bone broth
- 3-4 mushrooms
- 2 sticks of celery
- 1 tsp. salt
- 1/2 tsp. black pepper
Garnish:
- yoghurt
- feta cheese
- lemon juice
How to:
- Chop the onion and garlic.
- Cut the rest of the veggies.
- Sauté the onion & garlic and after that add the chopped zucchini & carrots.
- Mix while the veggies are cooking -it will probably take around 5 min.
- When the zucchini & carrots have changed their color add the broth and chickpeas and leave for another 5 -7 min.
- Take aside an leave to cool down for about 10 min.
- Use hand blender to pure the soup.
- Add spices.
- Serve with spoon of yogurt or cubes of feta cheese.
