This particular one is from last summer from my mum’s visits, but I did it a few times after that. I like to prepare the carrots this way as they are good for snacks and adding to salads, which lately I am trying with different Saur veggies. The recipe is with carrots but you can try other veggies such as celery, bell pepper, and cucumber.
Servings: 2 glass Jars of 500ml each
Time to Prepare: 15-20 min
Time to Cook: 3- 5 days

Ingredients:
- 700 -1kg Carrots
- 1 l water
- 40 gr. salt
How to:
- Peel the carrots and cut them into straight lines
- Organize them strait in the glass jar and leave them aside
Marinate:
- Bring the water to a boil and add the salt
- Leave the water mixture to cool down completely
- After the marinade has cooled down pour it over the carrots.
- Close the Jars very tight and leave them in a dark place, if possible.
- After the second day shake and leave again.
- It will take approximately 5 days for them to be ready for consumption.
You can use them in salads or just eat them as a snack.
