One of my recent mornings, I was looking to prepare breakfast, had spinach and eggs and instead of just making an omelet, I decided to try something different by adding a few more ingredients.

Ingredients:
- 500gr spinach
- 7 eggs
- 200 gr mushrooms
- 100 gr tofu or feta cheese
- 3 tbsp. yoghurt
- 1/2 tsp. salt
- 3 tbsp grapeseed’s Oil

HoW To:
- In a medium bowl, whisk eggs with yogurt and 2 tbsp oil. If you wish to add any additional seasoning you can add it here.
- Chop spinach, mushrooms and tofu/feta.
- In a medium baking tray greased with 1 tbsp oil, place, first the chopped veggies and after cover with the egg mixture.
- Bake on medium heat for about 20 min. (Depending on your oven it can be shorter or longer.)
- After the meal is ready leave it for a few minutes to cool and cut into pieces.
I prepare it very often, it is a great prep meal for a few days. Sometimes is my lunch even as well 🙂
