Kale and Buckwheat Salad

Lately, I have been into cooking kale salads with different veggies and toppings. This is one that I made photo of. It is very quick, tasty and healthy as usual. I tend to cook buckwheat on batches and add it to salad or as a side to different meals, and this was one of the cases I had it already boiled and just added it.



  • 150 gr. Boiled buckwheat
  • 100 gr. Kale ( two handful of kale)
  • 1 can of tuna fish
  • 1/2 head onion
  • 2-3 celery sticks
  • 1/2 tsp. salt
  • 1/2 tsp. black paper
  • 2-3 tbsp. lemon
  • 3 tbsp. grapeseed’s oil ( or oil of your choice)
  1. Cut the raw veggies into small pieces.
  2. In a medium bowl add the veggies and the boiled buckwheat. ( If you dont have cooked, you can boil 1/2 cup and leave it to cool, before adding to the salad mix).
  3. Mix well.
  4. Add the spices, oil, and lemon an mix well again.
  5. Serve as it is or a side dish for fish or meat. My mum had prepared pancakes so we used as a filling which works as well 🙂
  6. As a toping you can use a ranch type of sauce. We had a made aquafaba mayo but will add the recipe later.

And the star of the show is the sauce: Aquafaba is made with Chickpeace water and was constant in my meals this summer 🙂
