Breakfast with Rice Crackers

Hello 🙂

I always have rice crackers around and use them with some cheese or as a sandwich, but lately find out they are quite a good base for some sweets or as a different type of breakfast.
In Bulgaria, there is something similar made with bread and I decided to try it with rice crackers instead, and to my surprise, it turned great.
I prepared it twice, the first time in a smaller tray and the second I went a little larger.
The ingredients below are for larger quantities, as I was prepping meals for a week, but you can half them for a smaller proportion.


Time to Prepare: 15 min
Time to Cook: 20 min

  • 2-3 pkg. of Rice Crakers
  • 9- eggs
  • 200-250 gr. yogurt
  • 1 tbsp. salt
  • 2- 3 tbsp. mixed seeds
  1. In a bow whisk eggs add the yogurt & salt.
  2. In a greased baking tray place one row of rice crackers.
  3. Cover with the eggs mixture.
  4. Place one more row of rice crackers followed by eggs mixture.
  5. Place in medium heat oven and bake for about 15-20 min.
  6. Depending of the size of the tray it is good to have at least two row of rice crackers best three 🙂
