Butternut Squash Pancakes

Hello Everyone,

A few weeks ago, I had baked butternut squash but didn’t use it right away and last minute decided to try to prepare pancakes. Never tried something with fruit other than bananas and now wondering what else I can try 🙂 I will definitely try this recipe later in the fall as well.


Servings 25-30 :
Time to prepare: 45 min

Ingredients:
  • 2 eggs
  • 200 gr baked butternut squash
  • 1 tsp. baking powder
  • 150 gr flour
  • pinch of salt
  • 1 tsp. cinnamon
  • 1 tsp. oil
  • 1 tbsp. lemon juice
  • Oil for greasing
Garnish:
  • 1 banana
  • frozen berries/cherries
How to:
  1. In a medium bowl whisk the eggs.
  2. In another small bowl mash the pumpkin and add it to the egg mixture.
  3. In a cup put the soda with 1 tbsp. lemon and mix well, after that add it to the egg mixture. This is for better mixing the soda with the rest of the ingredients.
  4. Add the flour, salt, and cinnamon and mix very well until a homogeneous mixture.
  5. Another option in preparing the pancake mixture is to put all ingredients in a blender and blend until homogeneous mixture 🙂
  6. In a preheated greased pan start forming an oval shape with approximately one spoon per pancake.
  7. Cook for 2 to 3 mins on each side, until golden and crisp
  8. Keep until you finish the mixture.
  9. Garnish with fruits & honey and enjoy 🙂
