A couple of weeks ago, I made a different type of breakfast and decided to share it here. I think I saw on the internet that somebody had made a big zucchini roll. I wanted to try it, but of course, I didn’t have most of the ingredients and decided to bake just the zucchini and eggs- the two ingredients and it was delicious.
Like always simple, quick, and tasty 🙂
Servings: 4-6
Time to prepare: 15 min
Time to Cook: 15-20 min

Ingredients
- 1 medium zucchini
- 6 eggs
- pinch of salt
- black paper
How to:
- Cut the zucchini in very thin round slices slice as a paper list
- Whisk the eggs with salt and spices
- Grease the baking tray
- Lay one row with zucchini – it doesn’t need to be slice by slice. You can put a couple of pieces so you have a solid base.


- Cover with some of the egg mixture, not all.
- Lay another row of zucchini and again with eggs mixture.
- You should have around 3 rows of zucchini and eggs.
- The eggs will go down and at the end they will somehow the half of the zucchini, but thats ok as during baking the zucchiniwill reduce their volume.
- Bake in a preheated oven on a 180 degree for about 15- 20 min.
- Take out and enjoy – you can add yoghurt as a garnish.
