I love sauerkraut and last few months I had included it in my meals more often than before. It is a great source of vitamin K and is very tasty. I will try to prepare one by myself but for now will use a ready one. Usually, I make a salad with it and add something else but this time decide to make some kind of a meal and as I had chickpeas well this is how this recipe came about 🙂 Easy, quick, and tasty.
Servings: 4/ Time to prepare: 15 min/ Time to cook:15 min

Ingredients:
- 2 cans of boiled Chickpeas
- 200 gr saurkraut
- 1 medium onion
- 1 clove garlic
- 1 medium carrot
- 1 bell pepper
- 2-3 celery sticks
- 3 tbsp. Grapeseeds oil/or any other oil
- 1/2 tbs. black peper
- 1/2 tbs. turmeric
- 2-3 bay leaves
How to:
- Chop the fresh veggies.
- In a preheated pan with the oil of your choice, put all of them together. I used grapeseed oil as it has better nutritional value than other oils when cooking due to the higher smoke point.
- Leave for a few minutes while the vegies start changing their colors and mix from time to time.
- Drain the chickpeas from the water and add it to the veggie mix together with the sauerkraut.
- Add bay leaves.
- Leave for a few minutes so the vegies can mix their aroma.
- Add the rest of the spices.
- Serve and enjoy 🙂
