Chickpeas and Sauerkraut Stew

I love sauerkraut and last few months I had included it in my meals more often than before. It is a great source of vitamin K and is very tasty. I will try to prepare one by myself but for now will use a ready one. Usually, I make a salad with it and add something else but this time decide to make some kind of a meal and as I had chickpeas well this is how this recipe came about 🙂 Easy, quick, and tasty.

  • 2 cans of boiled Chickpeas
  • 200 gr saurkraut
  • 1 medium onion
  • 1 clove garlic
  • 1 medium carrot
  • 1 bell pepper
  • 2-3 celery sticks
  • 3 tbsp. Grapeseeds oil/or any other oil
  • 1/2 tbs. black peper
  • 1/2 tbs. turmeric
  • 2-3 bay leaves

  1. Chop the fresh veggies.
  2. In a preheated pan with the oil of your choice, put all of them together. I used grapeseed oil as it has better nutritional value than other oils when cooking due to the higher smoke point.
  3. Leave for a few minutes while the vegies start changing their colors and mix from time to time.
  4. Drain the chickpeas from the water and add it to the veggie mix together with the sauerkraut.
  5. Add bay leaves.
  6. Leave for a few minutes so the vegies can mix their aroma.
  7. Add the rest of the spices.
  8. Serve and enjoy 🙂
