Kale Stew with Mussels

For the last couple of weeks I have been cooking kale into different meals, and this one has been very successful. It is rich in proteins and vitamins.

Time to prepare: 15 min
Time to Cook: 15 -20 min.

  • 50 -70 gr Kale
  • 50-70 gr spinach
  • The total of greens is 120-150 gr
  • 100-150 gr muscles
  • 1/2 onion
  • 1 glove garlic
  • 2 -3 celery sticks
  • parsley
  • 2 tbsp. Grapeseeds oil
  • 2 tbsp. coconut creme
  • Fennel seeds
  • 2 tbs. Tahini
  • 2 slices fresh lemon

  1. Chop all veggies into small pieces.
  2. In a preheated pan with oil (you can use whichever you have) saute the garlic and onion till they turn golden.
  3. Add the rest of the veggies and mix well.
  4. Keep like this until the spinach and kale change to dark green (mix from time to time so it doesn’t get sticky).
  5. Add the muscles and keep for another 5 to 7 minutes, again mixing from time to time.
  6. Add the coconut cream and mix well.
  7. Add salt, black paper, flax, and sesame seeds, and mix well again.
  8. Leave for another 2 to 3 minutes and take out of the oven.
  9. Drizzle tahini and lemon juice on the top of each plate.
  10. You can decorate with parsley or lemon.
  11. Serve as a main dish or side dish.
  12. Enjoy 🙂

Hello! Just saw this now, and I noticed the recipe’s title — I surmise you meant “mussels”? I was confused at first glance, I thought the recipe called for beef muscle 😅
