Hello Everyone and Happy Sunday,
I am back to weekly batch cooking, and last week I prepared some baked veggies but added prawns. I think, I will add this to my favorite list- full of nutritions and colorful 🙂
Servings: 3 Time to cook: 30 min

Ingredients:
- small head of broccoli
- 1 bell pepper
- 3 medium carrots
- 1 onion
- 2 gloves garlic
- 250 gr prawns
- 2 tbsp. olive oil
- pinch of salt
- pinch of black pepper
- 1 tsp. flax seeds
- 1 tbsp. pumpkin seeds
Garnish:
- 1 lime
- 1 tbsp. tahini
How to:
- Cut the veggies into stripes(even the broccoli).
- Place them in a baking tray covered with baking paper.
- Add the prawns and mix well.
- Add spices and olive oil and mix well again.
- Place in a preheated oven and bake for 20 min on a 180 -200 degree.
- When ready take out and leave to cool for a few minutes before serving.
- Drizzle lime juice and tahini over each plate.
- Enjoy 🙂
